Bisorganyltrisulfane is a member of the class of compounds known as oligopeptides. Oligopeptides are organic compounds containing a sequence of between three and ten alpha-amino acids joined by peptide bonds. Bisorganyltrisulfane is practically insoluble (in water) and a moderately acidic compound (based on its pKa). Bisorganyltrisulfane can be found in a number of food items such as rocket salad (sspecies), dandelion, cloves, and chickpea, which makes bisorganyltrisulfane a potential biomarker for the consumption of these food products.
